If you think you have already seen everything the State Fair of Texas can deep-fry, this year’s food lineup may change your mind.
The 2026 State Fair of Texas has unveiled 40 new food and beverage options for visitors to try during the 24-day event at Fair Park in Dallas. The lineup includes savory dishes, desserts, frozen drinks and some combinations that are definitely designed to get people talking.
Among the new additions are the Chan’s Signature Pho Burger, which combines a beef burger with Vietnamese pho spices, fresh herbs, hoisin sauce, and Sriracha. There is also Fried Butter Chicken from Naan Better, featuring fried chicken potstickers tossed in butter chicken sauce and served over basmati rice.
For fans of Texas barbecue, the Texas Brisket Pierogies combine fried potato and cheese pierogies with Texas smoked brisket, lime sauce, pickled onions, Fresno peppers, and cilantro.
And then there is Deep Fried Ranch. Tracy’s Long Fries is introducing a pocket-sized, breaded, and deep-fried snack filled with creamy ranch sauce.
Those are only a few examples from a much larger 2026 State Fair of Texas food lineup.

The State Fair of Texas has built a reputation for creative food, and several of this year’s additions fit that tradition perfectly.
The Spicy Carbonara Ramen Korean Corn Dog combines a Korean corn dog with crispy Buldak Ramen Carbonara noodles, sauce, and cheese powder.

The Twinkle Twinkle Brisket Star takes a Twinkie, fills it with smoked brisket, bacon, jalapeños and cream cheese, then deep-fries it and finishes it with raspberry chipotle sauce.
For dessert, the Deep Fried Thai Tea Tres Leches Cake combines Thai tea, tres leches cake, tempura and whipped cream, while the Triple Chocolate Flautas feature brownies, molten fudge and chocolate chips inside crispy fried corn tortillas.
There are also new drinks and lighter options, including the Ferris Wheel Fizz, Midnight Ruby Rush and Mixed Fruits Tanghulu.
In other words, visitors looking for something beyond the traditional turkey legs and corn dogs will have plenty of new options to explore.

My take is that the State Fair of Texas continues to understand exactly what makes its food culture so entertaining: give people something familiar, add an unexpected twist, and make it memorable enough that they want to tell someone about it.
Personally, the Texas Brisket Pierogies, Fried Butter Chicken and Pho Burger stand out to me because they take recognizable dishes and combine them with completely different flavors and traditions.
But Deep Fried Ranch might be the one that gets the most attention simply because it sounds so unusual.
You probably are not going to try all 40 new foods in one visit, but that is part of the fun. The sheer variety gives Dallas and DFW visitors plenty of reasons to return to Fair Park throughout the 2026 State Fair season.
If you are planning a trip to the State Fair of Texas this year, I would recommend deciding in advance which new foods are at the top of your list. Otherwise, the options can get overwhelming quickly.
